With over 30 years’ experience as a chef in the UK, Darin has been Head Chef at 2-star Michelin restaurant ‘Andrew Fairlie’ at Gleneagles Hotel; Executive Head Chef of Sir Andy & Kim Murray’s 5 star ‘Cromlix’ Hotel, Kinbuck, near Dunblane; and been awarded his own Michelin Star at Ballachulish House Hotel, Highlands, Scotland. Early on in his career, Darin spent years in fine dining establishments in London, at Petrus, under Gordon Ramsay and The Capital Hotel, Knightsbridge with Eric Chevau.

Darin has cooked for heads of state at the Royal Banquet at the 2005 G8 Summit at Gleneagles as well as working with Albert Roux MBE (Member of the Order of the British Empire) for 9 years.

Darin is a keen forager, having spent his childhood on the family farm in Ayrshire, surrounded by nature and all its glory – this began a lifelong passion for learning about the plentiful abundance of Scotland’s natural larder.
